This coffee cake provides a nice mix of apples, raisins, and pecans.

Ingredients

  • 5 cups tart apples, cored, peeled, and chopped
  • 1 cup sugar
  • 1 cup raisins
  • 1/2 cup pecans, chopped
  • 1/4 cup vegetable oil (or cooking oil of choice)
  • 2 teaspoons vanilla
  • 1 egg, beaten
  • 2 1/2 cups all-purpose flour, sifted
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons ground cinnamon

Directions

  1. Wash hands with soap and water.
  2. Preheat oven to 350 degrees F.
  3. Lightly oil a 13x9x2 inch pan.
  4. In a large mixing bowl, combine apples with sugar, raisins, and pecans; mix well. Let stand 30 minutes.
  5. Stir in oil, vanilla, and egg. Sift together flour, baking soda, and cinnamon; stir into apple mixture about 1/3 at a time, just enough to moisten dry ingredients.
  6. Turn batter into pan. Bake 35-40 minutes. Cool cake slightly before serving.

I made this coffee cake for my wife's family's Christmas Eve get together. Everyone who tried it, enjoyed it. I took the leftovers back to my family and they enjoyed it too. At first, when mixing all the ingredients prior to pouring it into the pan, it appeared there would hardly be any cake to the fruit. However, in the oven, the batter part rises and makes more cake to go with the fruit.
