Savor this delicious casserole that will satisfy your comfort food cravings. This is a great weeknight dinner that's perfect to serve your family or your guests.

Ingredients

  • 2 potatoes (medium, sliced)
  • 2 cups carrot (sliced)
  • 1/4 teaspoon black pepper
  • 1/2 cup onion (sliced)
  • 1 pound ground beef, 90% lean (browned and drained)
  • 1 1/2 cups green beans
  • 1 can tomato soup

Directions

1. Lightly oil or spray baking dish with cooking spray.

2. Layer ingredients in order given. Cover.

3. Bake at 350 degree for 45 minutes or until tender and thoroughly heated.

4. Uncover and bake 15 more minutes.

Notes

For variation, use peas or corn instead of green beans. Use your favorite cream soup instead of tomato soup.

I agree with the other person who said that you have to cook it longer to get the potatoes done. I took it out of the over when it should should have been done and discovered that it was not. <br/>Once it was really done, the family loved it!

I've loved all of the recipes I've tried so far, but this one was my least favorite. I don't think the 45 minutes in the oven cut it. My potatoes were still very hard and dry.

I did use the suggestion of having peas instead of green beans and having Cream of Mushroom soup rather than tomato. Additionally, after the ground beef had browned, I added cumin and curry powder so the whole thing was "Indian-y". That's the beauty of this dish---after the ground beef is cooked, you can add all kinds of herbs to make this whatever flavor you want. I was amazed that it was so fabulous. Thank you!
