This coleslaw is big on flavor with nuts, mandarin oranges, and soy sauce!

Ingredients

  • 4 cups shredded cabbage (16 ounce bag of coleslaw mix)
  • 1 1/3 cups mandarin oranges, canned (drained)
  • peanuts (optional)
Dressing Ingredients:
  • 2/3 cup light Italian dressing
  • 2 tablespoons soy sauce, reduced sodium (low-sodium)

Directions

  1. Wash hands with soap and water.
  2. Mix together the coleslaw mix, peanuts (if using), and mandarin oranges in a large bowl.
  3. Stir in the Italian salad dressing and soy sauce.

As a resident of a primarily Asian community, the title of this recipe rather off-putting to me and the folks with whom I tried the recipe. There is nothing Asian about it, as written. Also, the (non-Asian) peanuts are a problem for many people. To make the salad safer, more interesting and tasty (and a bit Asian), we substituted cashew nuts for peanuts and added a bit of ground ginger to the salad dressing. With those variations, the salad was popular. It is certainly simple to make and offers a nice balance of fruit, veggies and protein. P.S. I hope someone will correct the typos in the recipe.
